- Boil water for 10 minutes to remove chlorine.
- Mince ginger
- Add to mesh brewing bag in a kettle.
- Add sugar, and citric acid
- Stir, bring to a boil
- Cover and allow to cool to pitching temp
- Remove bag
- Transfer to fermenter and allow to ferment dry
- Transfer to a keg
- Add metabisulfite and and potassium sorbate
- Backsweeten to taste (maybe16 oz dark muscavado sugar according to the zymurgy article, not sure though) dissolved in boiling water and prepared as a simple syrup)
- Carbonate to 3-4 vols and enjoy
