Notes
Heat cane sugar, citric acid and 3 quarts water to 235° for 20 minutes. This creates an invert sugar syrup that is easily digestible for the yeast.
Begin the fermentation with a dose of yeast nutrients by volume. Repeat nutrient dose once specific gravity falls 30%.
