Notes: so heres my watermelon berliner weisse recipe.
its pretty simple.
mash in and out as usually
but after mash out drop kettle temperature to 45 degrees and with a Ph reader check your Ph (should be at 4.8-5.0) if its higher use some 88% Lactic acid (sparingly) to drop your Ph.
once your Ph reading is right
pitch your ROOM TEMPERATURE lactobacillus (5335) cover with cling film and leave it. (mine took about 16 Hours) check it every 4 or so hours and do a Ph reading. Youre looking for somewhere around the 3.3-3.5 mark.
once pH level is right bring to a boil for 15 minutes and continue onwards like a normal brew (add hops, chill, pitch us-05, ferment)
once primary fermentation is finished rack onto frozen watermelon reduction*
and let sit for 8-10 days.
*watermelon reduction:(best to do this at least 3 day before racking into secondary) cut, and juice all of the flesh of the watermelon, place all of the juiced liquid and even pits of pulp into a pot and simmer until reduced by half then keep temperature above 88 degrees for 15 minutes. then place in a sterilized container and freeze until needed. |

Notes: As per information directly from a Schoenling employee in the 1990's, the original recipe had an O.G. of 13.3, IBU of 20.5 and ABV 5.56%. Schoenling only used 6 row barley and flaked corn (at one time used corn syrup). Original Schoenling recipe used Hallertau, Saaz and Cluster hops. Schoenling used a bottom fermenting lager yeast but it was fermented at warmer temps like a California Common beer and then lagered for 6 weeks. This beer definitely has the aroma of Saaz hops. |

Notes: Attempt #2 at making a Total Domination clone.
This is an enjoyable, slightly floral IPA. It is not Total Domination though. EDIT - this turned out to be a delicious beer that I'm very happy with, but I will continue to refine the recipe.
The grain bill on this is just about perfect. The hops are off though. Too floral, not enough bitterness. I'm going to add Simcoe as a bittering hop and as a late add, and cut back the amarillo/crystal additions by 25%.
The home brew store was out of Wyeast 1968 so I went with Denny's Fav 50 and I'm very happy with the clarity and flavor profile, leaves a bit of maltiness which is nice.

I've brewed this and I also believe this is cloned. I didn't try this side by side with Arrogant bastard, but I've had a lot of Arrogant Bastard. You could have told me this clone was Arrogant Bastard and I'd have believed you. Next time I brew this I'll compare them side by side.

Notes: Add a Campden Tablet to 10 gallons water to remove chlorine/chloramine (as required).
Water treated with brewing salts to: Ca=50, Mg=5, Na=10, Cl=50, S04=150
1.5 qt/lb mash thickness. Single infusion mash at 150F for 90 mins Mashout to 168F.
60-90 min fly sparge with ~6 pH water. Collect 9 gallons in the boil kettle.
Boil for 60 to 90 minutes. Lid on at flameout with 0 minute hops start the whirlpool for 30 minutes then start chilling immediately.
Cool wort to 60F and aerate well. Ferment at 60-62F for 7 days then room temp until complete.
Rack to keg in the keezser , chill at near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days.
Package as you would normally. I keg and carbonate on the low side to minimize carbonic bite and let the hop/malt flavor come through. |
