Notes: Create a 2-qt. (2-L) yeast starter in advance of brew day. This is a single infusion mash. Heat 3.16 gallons (12 L) strike water to 162 °F (72 °C) to stabilize the grain bed at 149 °F (65 °C) and hold for 90 minutes. Double-batch sparge with 6.62 gallons (25 L) of water to raise mash bed to 168 °F (76 °C). Toss in the first wort hop during the sparge.
Bring the wort to a boil and boil for 90 minutes, adding the hops as indicated in the ingredients list. After the 90 minute boil is complete, remove the wort from the heat and add the honey. *(I used my honey which was locust honey, I would stay away from dark late season wildflower honeys).
Quickly cool the wort to 60 °F (15.5 °C), oxygenate well, and pitch the yeast. Ferment for 10 days at 60 °F (15.5 °C). Once the primary fermentation is complete, transfer the beer to a secondary vessel. Drop the temperature to 50 °F (10 °C) and allow the beer to condition for one month. Bottle or keg as normal.
Turned out great. The photo was taken with about 2 weeks of bottle conditioning at 40F. At 8 weeks, it had cleaned up beautifully to be very clear. I can only imagine, the longer at those temps, the clearer it will become. |

Notes: Ferment at 61F 4-5 days. Cool to 32 over 5 days. Lager at 32 for 21 days.
Took 3-4 weeks to fully carbonate at room temp.
Edited recipe on 7/19/12 to go to .5 lb Vienna malt from 1.25 lb.
9/11/2013: Last couple of batches came out very slightly high in OG (1.050-1.053). Changing recipe today to show expected efficiency of 80%, and lowered pils malt and wheat malt to 7.5lb and 0.75lb respectively.
Also, consider using different hops - German noble hops as stated in BJCP 6C.
4/30: Used 8# Pils, 1# Wheat Malt, .5# Vienna. Got 5.5g @ 1.052.
7/16/2016: Got very high efficiency, so I scaled the hops up in recipe to get 6.25 gal to fermenter. Note that my earlier IBU target had been 26. This batch will be 29. After brewing, efficiency was not so high, but still 80%. IBU will be 32. Back off on hps next time.
1/21/2017: Modified recipe to target 24.6 IBU.

Notes: Brewed 11/16/2013 Hit mash temp at 154 and recirculated about 3/4 of a gallon. Hit 5.2 pH on the dot. Pre-boil gravity was 1.050 which puts it at about 79% efficiency. I got a little less boil volume (8 gal) than usually, probably due to the absorption rate of the oats. I used Greg's chugger pump for recirculating and to sparge with and it worked really well. No problems with stuck sparge. It might have been why my efficiency went up but it's possible because I boiled less. I hit 5.75 on the dot. I also cooled the wort down to about 68F because I had some extra ice. First day temp was dropped down to about 62F and by evening had raised up to about 65F. Day two the brew was about 56 or 66F. Day 3 fermentation started to slow down a lot so I let it drift up to 68F and in the evening I took it out of the swamp bath. Day 4 it's at 70/71F. Bottled on 12/1/13 and then kegged a little bit of the excess. Got 24 bombers and 7 twelves on the bottle. Carbed it to 2.1 volumes of C02. Bottle Code OMS. |
