Notes: this turned out very well, you can use any yeast you want, the chico strain will work,like US05, I like high flocculating yeast and I ferment at 60 so was trying several brands out.
I whirl-pooled at 0 until the temp reached 170ish. I strongly recommend both the first wort and the whirlpool, I actually put the hops in the mash right when I started the recirculation, the first wort will give it a clean smooth bite for the bitterness so the beer is slightly more on the bitter side that the ibu's say, I give it a 65 IBU for taste and the whirlpool will meld the hops for the very good finish, it can seem a bit strong flavored at first but after conditioning this is a darn good beer, I Like it :), keep in mind that this is a higher alcohol beer :) |

Notes: I have some honey from Nick Brading that he has collected himself from his own beehives!
I shall let this ferment out for a few days and then add the honey in a secondary, warming the honey before siphoning the partially fermented beer on top of it.
Highish bitterness in case the honey leaves any sweetness.
Clean yeast.

after draining grain bed- collect 1 gallon @170f of wort and pour back over grain bed.
once drained start sparging 170 1 gallon at a time till 5.5 gallons collected
still missed this target about .75gallon short
.75*strike volume is wrong use 1X strike volume for sparge
so efficiency will slip..
measured SG at 1.053 @ 60f despite missing sparge volume
boil 1 hour
follow hops, wifflock, burton salts, and brown sugar schedule
add 6 oz brown sugar last 5 minutes of boil
use EU cooling method
re-hydrate yeast and pitch at 70f or less

Notes: Malt mashed for 1 hour 15 minutes in 4 gallons hot water (~155 degF)
Sparged with 1 gallon hot water (~155 degF) and .5 gallons cool tap water (~75 deg F).
Chilled with wort chiller and transferred from kettle to carboy.
Dry yeast added directly to carboy during transfer.
Ferment 7 days then rack into bottles. Using 4 oz sucrose with 8 oz boiling water to provide invert sugar for priming. |

Result:
32L of wort, 1.057 before sugar addition. Sugar added second day of fermentation, dissolved in 2L of wort. Resulted OG will be 1.063 - too low for tripel but so be it. Yeast will be healthier for Quadrupel. Alc percentage expected at 6.6%.

Notes: Note Belgian Candi Sugar is home made amber. Around Mid color. Chinook hops are homegrown, IBU unknown. Actually added entire Chinook Hop Bine to the brew. Final IBU will be around 80 to 90. Adjust when boiling to really make hoppy. Two batches to be aged in 10 gallon Rum Barrel x 4-6 months. Not going for an aromatic hoppy ale. Want flavors to meld with the barrel flavors. Follows a Tripel that has been in the Barrel 6 months. |
